Chef’s Dinner Menu
Dinner Menu will feature:
Chef’s Old Fashioned or Daou Vineyards Rose, with passed appetizers, including Grilled Shrimp with Avocado Salad and Cilantro, Prosciutto wrapped Jumbo Asparagus, Dijon Aioli, and the Derby’s Garlic Cheese Gougere. Salad will be the Derby’s Brussels Sprout Waldorf with wildflower Honey Vinaigrette, Shaved Brussels Sprouts, Candied Walnuts, Apples, and Parmesan. Next, the Pasta Course, the delicious Wild Mushroom Lasagna, with Fresh Made Pasta, Roasted Mushrooms, Black Truffle Cream, Parmesan Reggiano and Chives.
Family-Style Sides include Black Truffle Mashed Potatoes, Lemon Parmesan Brussels Sprouts, and Chile Honey Glazed Thumbelina Carrots.
Entrees are (choice of 1 per person) Rainbow Trout Amandine with Brown Butter, Grilled Lemon, Almonds and Haricot Verts, Crispy Eggplant Parmesan with Roasted Tomatoes Sauce, Basil Oil, Parmesan, and Fresh Mozzarella, or a Prime Flat Iron Steak Marinated with Shio Koji, Charred Broccolini, and Creamy Sesame.
Enjoy a glass of Deloach Heritage Reserve Wine.
And for dessert, the Derby’s Famous Baked Alaska.
